What I Ate in a Day

Hey there, I’m here for Food Diary Week 2!  I have to be honest, I have misgivings about my first food diary post.  I ended up getting pretty hungry later that night and realized I should have eaten more food that day.  I never want to suggest or in any way encourage a severe restriction of calories.  Please keep in mind that I am very petite and may need less calories than other builds and activity levels.  I’m always going to be honest in my documentation and that was a day where I got busy and immersed in what I was doing and just didn’t nourish myself as well as I should have!

So, here’s this past Saturday.  I worked 7:30-3, received a massage from 3-4, and coached a client from 4:30-5:30.  I did a 15 minute body strength workout in the evening.

Breakfast: Phase 1 at 7:30 a.m.; Phase 2 at 10:30 a.m.

I often grab Starbucks on Saturday mornings when I open the clinic, and I love their new sous vide egg bites!  These are grain-free and had spinach and roasted veggies in them.  A few hours later, I had a Paleo banana-chocolate chip muffin and some tea.  My friend Kelsi made the muffin and it was so good; she’s a great baker!  My love language is Paleo baked goods!

Lunch:  1:45 p.m.

I headed over to Mama Jeans Natural Foods Market and picked up a “Paleo lunchbox” with turkey zucchini meatballs, tzatziki sauce, cherry tomatoes and artichoke hearts, and assorted nuts.  I paired it with their broccoli salad.  Look at the pretty colors!  Want to make your own Paleo tzatziki sauce?  Seriously, I would dip anything in this stuff.

Dinner:  6:45 p.m.

Finally, something I made with my own two hands!  I had panang curry for dinner…and that “rice” you see is actually riced cauliflower.  If you haven’t made something involving a curry-coconut milk base then I am sad for you.  Try it and be comforted 🙂

I don’t remember if I had dessert Saturday night, I’m going to guess no since I had the chocolate chip breakfast muffin!  But if I did, it would have been a couple of squares of dark chocolate.  I’m also sure I had a few La Croix sparkling waters, and my tea was Jade Citrus Mint from Starbucks, which is a lovely green tea.
